A very healthy, easy, lowcalorie recipe which has proved enduringly popular and loved by everyone who has made it, so I've converted it to the Thermomix - and as well as being lowcalorie (and of couse, delicious), it's also very easy to make, and you can tweak it to suit you

You can leave the nuts off the topping, and out of the cake if you want to avoid them (or substitute for a mixture of pine nuts / sunflower seeds and pumpkin seeds, roughly chopped, for a nutty texture), and you can use an orange drizzle icing in a lacy pattern over the top if you want to avoid dairy (see options)

[Calories in square brackets]. From 145 calories for the baked feta in tomato sauce alone, or 279 calories per portion including bread (see below). Calories, if you're counting - 895 for the whole baked feta in tomato sauce (including 1 tbsp oil drizzled over), or 580 using lighter cheese and no drizzle of oil. 536 calories for a 200g small white baton of crusty bread. 279 calories each for the lighter option (including bread, 145 without), or 358 calories per person for full fat feta and a drizzle of extra virgin olive oil (224 excluding bread). 200g good feta cheese (you could use lighter Greek salad cheese if you're trying to cut calories, vegetarian feta available) [560 / 380 lighter]. a crusty daktyla country loaf, topped with sesame seeds), or a small crusty white baton (200g - 536 calories in total, if you're counting) or gluten-free bread (DS brown seeded ciabatta rolls are good warmed up). Finely chop the onion and slice the garlic cloves (Thermomix, drop onto running blades, speed 4). Fry the onion over a low heat in the olive oil until softened then add the garlic and continue to cook for another minute or two until fragrant (make sure it doesn't catch or burn or it will taste bitter) (TM add the tsp oil and cook 5 minutes / 100C / Speed 2 / Reverse Blade Direction). Simmer for 25-30 minutes over a low heat until reduced to a pulpy texture (TM add the other ingredients, mix 2 seconds / Speed 4, and then cook 20 minutes / Varoma Temperature / Speed 2 / Reverse Blade Direction with the MC at an angle to reduce spitting, or until the sauce is pulpy). If you're having a bit of a Greek mezze, why not try my Greek spinach and feta filo pie on the side (302 calories for a main portion), along with my Greek salad (79 calories for a side portion), and make a meal of it. OR use chicken breasts for a lowercalorie option if you prefer, and reduce the cooking times. I use four (de-seeded) scotch bonnet chillies in my marinade which is nice and spicy, but not blow-your-head-off-inedible (my daughter eats it quite happily, and she is the 'baby-mouth' of the family

So if you don't have a Thermomix or an Easiyo, have a look here for other ways to make it - the methods are the same, it's just the ingredients which are different (see below), although without the temperature controls you have with the Thermomix, and by using an Easiyo as per my method, you're not necessarily guaranteed success every time, as this method has proved to be foolproof (although if you have a yoghurt-making machine I'm sure that will do the job

So, in brief, the three things which are essential for you achieving perfectly thick and creamy non-grainy yoghurt are temperature (a few degrees too high or low and you will get runny yoghurt which hasn't set, or yoghurt which leaks loads of whey, the watery stuff, as the protein strands are too thick and readily leak*, hence the need for a thermometer), fresh milk (if it's at the end of its date, you're likely to get grainy, gritty yoghurt, so use it for something else, it's not worth it

This quantity serves a good eight to ten (from 245 calories per generous portion) - but let's face it, if you're having a barbecue for friends and making a heap of jerk chicken, you'll be glad of it. For those counting calories it's 2,448 for the whole quantity. Hence for a tenth portion, it's 245 calories. I personally think if you're going for a lowcalorie meal, you'd probably be happy with a half portion at 123 calories together with a big salad and portion of something like jerk chicken (breast) for a tasty and balanced lowcalorie meal.
