The perfect wintermuffin. Ingredients. pinch salt. Add the rest of the ingredients. pinch salt. 200gm cooked pumpkin or sweet potato. 90 gm almondmeal. 1/2 Tablespoon of cumin. Pre-heat oven 180C, grease muffintins. If you need to cook pumpkin first cut up into large chunks pop intothermomix with 50gm water (Varoma, Speed 1, 10 minutes) allow to cool. *Variation - if you do not have almondmeal use 270 gm SR instead*. *Note - depending on how you cooked your pumpkin, you may need to add 50gm of extra milk at the end if batter is too thick, mix for further 10 seconds on speed 6*. Bake in oven approx 15-16 mins for minimuffins, approx 20 mins for large muffins. Makes 12 large muffins or 24 minimuffins.   200gm cooked pumpkin or sweet potato. 90 gm almondmeal. 1/2 Tablespoon of cumin
