Ingredients

  • 500 g medium zucchini
  • 2 eggs, lightly beaten
  • 1/2 cup self-raising flour
  • 1/3 cup grated cheddar cheese
  • 1 tablespoon snipped chives (or green onion tops)
  • salt and freshly ground black pepper to taste
  • extra virgin olive oil for shallow frying
  • For serving
  • 250 ml thick sour cream
  • 1 tablespoon finely chopped preserved Lemon
  • 1 tablespoon finely snipped chives or parsley
  • Approx. 150 g sliced smoked salmon
