  • 2.5 kg hogget leg or shoulder bone
  • Olive oil
  • 8 pearl onions
  • 50 g unsalted butter
  • 2 carrots cut into chunks
  • 8 new potatoes
  • Salt and pepper to season
  • 2 crushed garlic cloves
  • 250 ml dry white wine
  • 250 ml water
  • Sprig of rosemary
