  • ¾ teaspoon salt
  • 300 mls buttermilk
  • 1 cup castor sugar (superfine)
  • 1/4 cup water
  • 5 egg whites
  • 1/4 cup castor sugar (superfine)
  • 250 g unsalted butter, cool room temperature
  • 1/2 cup sugar
  • 1/2 cup water
  • 1 tablespoon Amaretto Liqueur
  • a few drops of almond essence
