  • 10 kg of ripe tomatoes, cut in half
  • 3 red onions, cut into chunks
  • 1 whole head of garlic, papers on but root end removed.
  • 2-3 BIG handfuls of fresh basil
  • handful of fresh parsley and fresh oregano
  • 3 or 4 bay leaves
  • salt to taste
