Once it is cool, gently stir inthe diced, cooked chicken (the sauce will have thickened / set a little upon cooling, but don't worry, it will loosen againinto a lovely creamy sauce once cooked and hot)

The lentil dish in itself is vegan, so if you wanted to make this into a vegan or vegetarian main dish, you could miss out thechicken, and add extra vegetables, and top with some crumbled feta (not vegan), and/or roast some spiced squash or sweet potato wedges and red peppers inthe oven
