Ingredients

  • 200 g ice cold butter, chopped into small chunks (you can freeze the butter for a while)
  • 200 g plain flour
  • 90 g cold water
  • 1/2 tsp salt
  • 150 g creme fraiche
  • 1 Tbsp wholegrain mustard
  • 1 pinch sea salt flakes
  • 1 pinch black pepper
  • 1 egg
  • 2 smoked salmon fillets, in small pieces
  • 50 g fresh spinach
  • 1 lemon, juice only
