This recipe was inspired from the first Thermomix demonstration I attended50g rapadura (or coconut sugar)50g gluten free flour (can use regular)1 egg1 can coconut milkzest from 1 lemon (more if you like the flavour)Place the rapadura and flour into the thermomix and grind on speed 8/9 for 4 seconds. So here is my thermomix conversion of The Rawtarians Chocolate ShortbreadBase140g cashews140g shredded coconut60 medjool dates10 g coconut oil1/4 tsp saltProcess base in the thermomix 20 seconds, speed 8 and then press into a panChocolate140g cashews75g coconut oil60g raw honey45g lemon juice30g raw cacao powder1tsp vanilla paste1 tbsp waterpinch of saltProcess chocolate in thermomix for 60 seconds, speed 9 until smooth (as you can see from mine I didn't do it that long LOL and has some chunky bits in it). 140g shredded coconut. 10 g coconut oil. 75g coconut oil
Making chocolate mousse in the Thermomix is oh-so-easy. For ever chocoholic out there, there’s nothing more decadent than a bowl of chocolate mousse for dessert
Combine chocolate, condensed milk and butter in a saucepan. Next add the rice bubbles and the dessicated coconut into the mixture and give it a good stir till combined
