Ingredients

  • 50 g Butter
  • 2 Onions Chopped
  • 2 Carrots Chopped
  • 1/3 Leek Chopped
  • 5 Cloves of Garlic Crushed
  • 1 Knob of Ginger the size of your thumb grated finely
  • 1 Chilli Chopped finely
  • 2 teaspoons Ground Cumin
  • 2 teaspoons Ground Coriander
  • 1 Can of Coconut Milk
  • 2 Cups of Chicken Stock Real, Packet or Stock Cube
  • Sesame Oil A Splash
  • Fish Sauce A Splash
  • 1/2 a butternut pumpkin, cut into 2cm cubes
  • 200 g/1 large Sweet Potato Peeled and diced or 1/4 pumpkin
  • 80 g/2 medium Potatoes Peeled and diced
  • 2 Kaffir Lime Leaves Very Thinly Sliced
  • Fresh Thai Basil (optional)
  • 2 tablespoons Brown Sugar
  • A few Bean Sprouts to garnish
