I used sweetpotatoandcauliflower, but you could easily use kohlrabi, carrots, a winter squash, parsnips, swede, salsify – anything of this rooty, autumnal sort

So I whipped up this silky smooth soup - thanks Weight Watchers and Thermomix for the inspiration. Place one onion and two cloves of garlic in Thermomix - chop at speed 7 for 3 minutes. Add 15 ml oil (I used rice bran oil) and cook 3 minutes 100 degrees speed 1. While that is happening roughly chop 2 small sweetpotatoes, half a cauliflowerand drain a can of chick peas. Add to Thermomix with 1000ml water, 2 tablespoons stock paste, 2 teaspoons powdered cumin and a shake of tabasco. Based on 6 serves that is a handydandy 2 PP per serve

Salt and pepper to taste. In a large bowl place the grated vegetables and cheese. Add the flour, vegetable stock powder, salt and pepper and stir to coat the grated mix
This SweetPotato, Lime and Coconut Soup sounds kinda odd, but trust me it works. It basically involved cooking all of the vegetables, adding a bit of lime zest and some coconut milk and then pureeing them all together
I used sweetpotatoand regular potatoes but really you could use anything you have. Spread the potatoes over the base of the baking dish and scatter the bacon over the top
One little tip when making these Healthy SweetPotato Quinoa Bites is to make sure that the leftover mashed sweetpotatoand the quinoa are cold before using them – it just makes it so much easier to shape into little mini bites
Add the cooked quinoa, garlic, breadcrumbs, parmesan cheese, zest and lemon juice. Notes These will taste great alone or with some sweet chilli sauce or a yoghurt sauce
