Ingredients

  • 20 minutes (2hrs Marinating time)
  • 4 x pork cutlets
  • 1/2 cup of extra virgin olive oil
  • 2 cloves of garlic
  • 2 tbs of sweet paprika
  • 1 tbs of ground cumin
  • 1 tsp of chilli powder
  • 2 tsp
  • of dried oregano
  • 1 tsp of sea salt
  • 1/2 tsp
  • of ground black pepper
  • 4 bay leaves
  • 2 tbs of red wine vinegar
  • 2 tbs of fresh thyme
  • 1 bag
  • of baby rocket leaves
  • 1 punnet of yellow grape tomatoes (red is fine, I just like the colour)
  • 2 x chorizo sausage
  • 1 red capsicum
  • 1 red onion
  • 400 gm tin
  • 1/2 cup
  • of chopped fresh parsley
  • 2 tbs of olive oil
  • 2 tbs of red wine vinegar
  • 1/2 tsp of caster sugar
  • Sea salt and Pepper
