Chorizo or Italian sausage, casing removed and crumbled

To get a nice 'dirty' colour to my rice and peas, I like to use a tin of red (kidney) beans and include the liquid from the tin, and use a red onion - you don't really want your rice to be 'Persil white' if possible
Place the olive oil, chopped onion, peas, the peeled tomato cut into small pieces and the red pepper sauce in a saucepan and cook over low heat until the tomato start to break down, stirring occasionally
This rice skillet with sausage is remarkably similar to my favorite pasta and sausage recipe. The sausage adds so much flavor that you don’t need any other seasonings
*Creamy LemonRice*. It has a nice zesty lemon flavour. its just rice after all, but don't let the simplicity of it fool you into thinking it isn't very special
Add the sausages cut into slices and the rice and season with a little salt. Stir, pour the water (twice the rice volume) and boil over medium-high heat
Serve with rice. Boil sausages for 15 minutes or until cooked, allow to cool then slice into small pieces. Add chopped sausages, and simmer for 5-10 minutes or until heated through. 6-8 sausages
This is also a grown up version of my childhood favourite food combo of plain rice with sausages and ketchup which strangely, still appeals to me until this day

Her recipe is for lemon and passionfruit cheesecake. It contains store bought lemon curd and tinned passionfruit pulp, and if you have a food processor to crush the biscuits, the whole thing is a breeze to put together
I was hooked on mum's lemon butter or 'jam', as we would call it growing up. As a treat, mum would send my sister and I to school with lemon jam sandwiches or fill homemade shortcrust tartlets with the jam, we also topped her homemade scones with it for a weekend lunch
