Ingredients

  • Roasted Eggplant
  • 16 x small thai eggplants (or 1 x large eggplant)
  • 1 - 2 tablespoon olive oil
  • 1 teaspoon sweet paprika
  • 1 teaspoon ground cinnamon
  • 2 teaspoon cumin
  • 1/4 cup unhulled tahini
  • 1/4 cup water
  • juni of 1 lemon
  • 1 clove garlic, minced
  • 2 x small pita bread
  • 1/4 cup fresh mint leaves
  • 2 tablespoon pine nuts, toasted
  • 1 tomato, sliced
  • 2 cups lettuce
