In our house pancakes are consumed quite a bit, not just on Shrove Tuesday. A late morning visitor gave me the perfect excuse to make these slightly more indulgent pancakes for brunch
A lazy morning generally means there is one thing for breakfast – Pancakes. All three of my boys love to make (and eat) pancakes – especially when we decorate them
I happen to have chia seeds and lemons coming out of my ears at the moment so I was looking for something that I could use both in and ended up with these Lemon, Ricotta, Yoghurt & Chia Muffins
And to make six pancakes. The only time I can imagine justifying buying pancake mix is if you’re hiking, carrying your week’s food with you and you wanted to make pancakes one morning, on an open fire, high up in the mountains
To start with I was a little nervous about the whole attempting to make gnocchi thing because traditional potato versions can be fairly filling plus Mr B hadn't tried gnocchi before and I may have talked it up a little bit but everything I read about ricotta gnocchi promised 'light fluffy ricotta clouds' and well seeing as I had the ricotta there ready to go, what did I have to lose
By adding the pear the pancakes are always moist and have a bit of extra natural fibre in them. This comes from an old Jamie Oliver recipe that I always use
