Ingredients

  • 200 g of rhubarb
  • 1 cm lengths
  • 1 min at a time, stirring in between, until done
  • 3 mins Make sure you let the rhubarb cool before using in this recipe
  • 125 g butter, softened
  • 250 g castor sugar
  • 1 cup stewed rhubarb
  • 300 g plain flour
  • 1 tsp bicarbonate of soda
  • 1/2 cup white choc chips
  • 1/2 cup dried cranberries (craisins)
