  • 1 1/3 cups almond milk + 30 ml for the mousse
  • 1 1/2 tsp white vinegar (or cider vinegar, if you are less worried about FODMAPs)
  • 2/3 cup caster sugar
  • 1/2 cup sunflower oil
  • 3/4 cups rice flour
  • 1/4 cup almond meal
  • 1/2 cup tapioca flour
  • 2/3 tsp xanthum gum
  • 1/2 cup cocoa
  • 1 tsp baking powder
  • 3/4 tsp bicarb of soda
  • pinch of salt
  • 3/4 cup crème de menthe
  • 225 g dark chocolate
  • 250 g silken tofu
  • 30 ml crème de cacao
