  • 250 g packet plain sweet biscuits (the sort you’d use to make a cheesecake base, eg Scotch Finger or Butternut Snap)
  • 100 g unsalted butter, melted and cooled
  • 40 g chilled unsalted butter
  • 1/2 cup brown sugar
  • 1/2 tspn vanilla essence
  • 140 mls heavy cream
