Ingredients

  • 24 small macaroons
  •  
  • For the Salted Caramel Sauce
  • 115 g caster sugar
  • 125 ml water
  • 250 ml cream
  • 1 teaspoon sea salt flakes
  • 50 g unsalted butter, cut into 1cm cubes
  •  
  • For the Macarons
  • 110 g almond meal
  • 200 g icing sugar
  • 3 tablespoons water
  • 60 g caster sugar
  • 90 g egg whites (about 3 egg whites), at room temperature
  • 1/2 cup popcorn, blitzed in a food processor to a small crumble while still warm
  •  
  • For the Filling
  • 100 g unsalted butter, at room temperature
  • 200 g icing sugar
  • 1/4 cup salted caramel sauce
