  • 2 TBS olive oil
  • 6 large baking potatoes
  • 1 large leek, washed, trimmed, and most of the tough dark green leaves discarded
  • 3 celery stalks, washed and trimmed
  • 4 large free range boneless, skinless chicken breasts
  • fine sea salt and freshly ground black pepper to taste
  • 4 to 8 thin slices of Proscuitto ham
  • a few sprigs each of fresh thyme and marjoram
  • a splash of white wine
  • 240 ml of double cream (1 cup, whipping cream)
