Push your chickenand onion over to one side of your pan or wok. If you don’t have time to wait for your rice to cool, you can always buy one of the pre-cooked packets of rice from the supermarket – they work perfectly
Put the teriyaki marinade ingredients -the mirin, soy and sugar (or honey) - in a non-metallic dish which will snugly contain the chicken (or you could use a sandwich bag), stir to dissolve the sugar a little and put the chicken into the marinade, ensuring evenly covered
