Ingredients

  • 20 cm cake
  • 24 muffin cups
  • 400 g carrots
  • 300 g chunks of fresh pineapple
  • 4 large eggs
  • 80 g macadamia oil
  • oil
  • 1 tsp vanilla bean paste
  • 180 g honey
  • 370 g plain gluten free flour
  • 1 tsp cinnamon
  • 2 tsp baking soda
  • 3/4 tsp sea salt
  • 150 g walnuts
  • 80 g raisins or sultanas
  • 30 minutes for cupcakes, an hour or so for two
  • 20 cm cakes
  • 3 until just combined
  • 200 g thick coconut cream
  • 2 tsps fresh lemon juice
  • 1 tsp vanilla bean paste
  • 60 g raw honey
