Ingredients

  • 200 g Scotch Finger biscuits
  • 100 g butter, melted
  • 4 strawberries, diced
  • 1 tsp caster sugar
  • lemon
  • 300 g cream cheese, softened
  • 1/4 cup icing sugar
  • 1/2 cup cream
  • 1/2 tsp vanilla extract
  • 1 tsp lemon rind
  • 1 tsp caster sugar
  • 4 diced strawberries,
  • 1 tsp of caster sugar and a squeeze of lemon in a small bowl of a food processor and process until it becomes a puree.
