Ingredients

  • 30 grams buckwheat flour
  • 30 grams white rice flour
  • 2 tablespoons strong brewed coffee
  • 100 g dark eating chocolate, chopped
  • 100 g butter, chopped
  • 1 tsp vanilla extract
  • 2 tablespoons cocoa powder
  • 1/2 cup caster sugar
  • 1 egg, at room temperature
  • 1 egg white, at room temperature
  • 80 g butter, softened
  • 1 1/2 cups icing sugar, sifted
  • 1/4 cup cocoa, sifted
  • 2 tablespoons milk
  • 2 tablespoons raspberry jam
  • Fresh raspberries to decorate, if desired
