Ingredients

  • 125 g butter
  • 3/4 C caster sugar
  • 1 whole mandarin
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground cardamon
  • 2 eggs
  • 1 C plain flour
  • 1 C SR flour (again I used gluten free)
  • 1/2 C greek yoghurt
  • 125 g butter, softened
  • 180 g caster sugar
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground cardamon
  • 150 g plain flour
  • 150 g SR flour
  • 140 g greek yoghurt
  • 180 C and line a
  • tin
  • 10 seconds Add sugar, butter, mandarin, cinnamon
  • 10 seconds Add the eggs and mix in Speed
  • 5 seconds Add the flours and yoghurt Speed
  • 8 seconds so that everything is combined Spoon into prepared muffin tin until the holes are nearly full Bake for
  • 25 minutes until they are golden and firm to touch Cool in the tin for about
  • 10 minutes and then turn out onto a wire cooling rack until completely cooled
