Load the cake up with whipped coconut cream and then decorate with edible flowers and raspberries. Raspberries, edible flowers, whipped coconut cream and melted dark chocolate to decorate
rinse sultanas under hot water, than cold water, dry them on paper towel, rinsing dried fruit, were applicable, will help to keep the light yellow colour of the cake, if using cinnamon or other dark spice mixes, this step is not necessary, be aware that soaking dried fruits in sweet alcohol or fruit juices will darken the colour of the cake

In a separate bowl beat egg yolks, gradually add sugar and vanilla until pale yellow in colour. Slowly add flour, either by hand or on mixer very slow, using whisk attachment
At our city office, they had lovely yellowflowers to set the scene. Once the cake has cooled, you can slice and eat it as is, or ice with a simple icing made of icing sugar and orange juice (which is what I did)

The cake has a glorious yellow colour from the saffron. Craig is gluten and dairy intolerant, so I wanted a recipe that was free of both, but was not something typical of gluten freecakes (eg almond meal/chocolate)
The recipe comes from Heather over at Sweetly RawSimilar to me, Heather was once following a raw vegan diet high in natural sugars for a few years until she hit some road blocks with her health and began an entirely different way of eating in order to heal her body
