Add flour, baking powder, coconut and salt and combine Reverse
4 seconds
Pour the batter into the prepared tin and bake in the oven for
40 minutes
or until an inserted skewer comes out clean
Cool in the tin for
10 minutes
and then turn out onto a cooling rack to cool completely
When you are ready to serve spread a layer of the yoghurt over the top and then top with shredded coconut or whatever takes your fancy
Turn off the oven and unmold the cake. In an electric mixer, beat on medium speed the brown sugar, butter, lemon zest and the orange zest until a homogeneous mixture
Cool in the tin, then remove to a cake container. Bring to the boil 500g of dried fruit, covered with cold water. Boil 5 mins then drain. Add 125g melted or solid coconut oil. 5 cups coconut sugar. Put into a 20cm cake tin or loaf tin & bake 30-60 mins 175oC until a skewer inserted comes out clean. 5 cups coconut sugar

Another great bonus of this cake, is that it's gluten free, grain free and nut free (coconuts are seeds, see here for more information regarding allergies and make sure you check with anyone with a nut allergy), and you can also make it dairy free if you want, by using coconut oil (the solid white variety, preferably extra virgin) instead of butter

Put on baking tray and drizzle with oil. I saw some pre-made meatballs like this in the supermarket and thought that the flavour would be yummy but I didn’t want all the added preservatives & fillers they put in so I got a bit creative at home and came up with this version
Mix chunks of chocolate or other sweets (M&Ms. MyProtein was kind enough to send me their absolutely gorgeous Coconpure Certified Organic Virgin Coconut Oil and some Natural Peanut Butter with no added sugar or salt along with the Superfine Teff Flour and I thought these might combine nicely into some peanut butter brownies
