Ingredients

  • 30 Minutes Cooking time
  • Olive oil for frying
  • 4 x 200gm Blue Eye Cod fillets, skinned and boned
  • 1 egg
  • 2 tbs of flour
  • 1/2 tsp of paprika
  • 2 cups of breadcrumbs
  • 1 clove of garlic
  • 2 tbs of grated parmesan
  • 2 tbs of finely chopped flat leaf parsley
  • 4 large desiree potatoes
  • 2 tbs of olive oil
  • 1 cup
  • of whole egg mayonnaise
  • 1 tbs of baby capers
  • 2 tbs of corn
  • 1 tbs of flat leaf parsley
  • 1 tbs of dill, finely chopped
  • 2 tsp of white vinegar
  • Sea salt and pepper
  • 5-10 minutes The fish is cooked when it pulls apart easily with two forks
