Ingredients

  • For the vanilla cupcakes
  • 110 g butter
  • 110 g caster sugar
  • 2 eggs, at room temperature
  • 1 tsp vanilla extract
  • 110 g self raising flour, sifted
  • 1-2 tbsp milk
  • For the frosting
  • 3 salted duck egg yolk, steamed for 7-8 minutes then mashed white hot
  • 10 g butter, softened at room temperature
  • 100 ml milk
  • 10 g custard powder
  • 15 g caster sugar
  • 1/2 tsp cornstarch
