Ingredients

  • For the cake
  • 2 tablespoons soft butter
  • 3 ripe bananas
  • 3 cups all purpose flour (plus a little more for dusting pans)
  • 2 cups sugar
  • 1 teaspoon baking soda
  • 1 tsp cinnamon
  • 1 teaspoon salt
  • 3 eggs, beaten
  • 1½ cups coconut oil, (if weather is cold and oil is solid, heat slightly to make liquid)
  • 1 cup crushed pineapple (from a can)
  • 1½ teaspoons vanilla paste (or extract...I always prefer paste:)
  • 1¾ cups chopped walnuts or pecans (divided)
  •  
  • For Cream Cheese Frosting
  • 8 oz cream cheese, room temp
  • 1 stick butter, room temp (1/2 cup)
  • 3 cups powdered sugar (confectioner' sugar)
  • 1 teaspoon vanilla paste
