I am still baking dairy free, glutenfree. Even without the white chocolate chunks (which I skipped), they were fabulous, and you'd never know they were glutenfree
use a spoon or fork to drop cookie dough bites into the chocolate, place on a tray lined with baking paper or into mini patty pans and place in fridge or freezer to set
You could experiment with using white chocolate as a topping too, but firstly, it's not usually dairy free, secondly, it didn't look quite so nice once cooled and set, and thirdly, it just didn't taste as good, which is why I haven't put it as a suggestion - it was my favourite Green & Black's organic white chocolate as well
Sometimes you need a snack on the go. Maybe you’re running late in the morning or you’ve got a few minutes back at home before heading out again in the evening

)So here's my recipe, but feel free to change and tweak it to taste - use more or less chilli or cinnamon, maybe some coriander seeds roasted in the Thermomix bowl and ground up with the other spices - there's plenty of ideas in the Indian cookbook recipe, so have a look and tweak to your heart's content

- 35g raw cacao powder (if you use regular cocoa or carob powder, you may need a bit less)- 40g Rapadura (or a dash of honey or pure maple syrup or agave nectar, or a 1/4 teaspoon of green stevia powder)- 2 frozen bananas, chopped in pieces- 1 frozen avocado, chopped in pieces (you can buy avocado frozen in the frozen berry section of the supermarket, or freeze your own)4
