ingredients2 tbsp chia or flaxseeds180g filtered water100g frozen raspberries (or mixed berries) + 1 tsp raw honey120g butter, softened100g organic rapadura sugar (or sucanat)1 tsp stevia powder100g dried dates1-2 tsp vanilla bean paste3 eggs, room temperature100g wholemeal spelt flour200g white spelt or plain flour2 tsp baking powder100g natural yoghurt25g raw cacao powdermethod1. Add the raw cacao powder plus a little milk or water (1 tbsp) to the remainder of the mixture in the TM bowl and mix for 5-10 seconds on speed 5. 25g raw cacao powdermethod
So much so that I decided to use them as my core ingredient in my little cupcakes. It’s just so much fun to throw them onto baking treats and see how the colours just change the look and feel of the cupcakes

I used cacao in mine to give it that healthy edge (who am I kidding. 1 egg white100g caster sugar45g grapeseed oil2 tablespoon water½ tsp vanilla bean paste65g plain flour15g cacao powder¼ tsp bicarb soda¼ tsp saltChoc bitsPreheat oven to 160deg and line a lamington tray with baking paper. Add flour, cacao, bicarb and salt and mix on Speed 5 for 10 seconds. 15g cacao powder

P Make this little cute Milo cupcakes for the kids' tea break. These subtle Milo flavour cupcakes though not as rich as the usual chocolate cuppies, they are still very tasty and inviting
