But today the recipes really spoke to me and I just had to make these Sticky Date & Chocolate Brownies that are perfect for people who are diary free but also for mums who want to reduce the amount of refinedsugar in their kids diet
It's dairyfree, glutenfree and sugarfree but totally yum. Although it is totally healthy, sugarfree, glutenfree and all that it is pretty rich so I would save it for the weekend or special occasions
Because there isn’t any refinedsugar the cream cheese taste is quite obvious so may not be to everyones liking but I really enjoyed them (and you could make the brownie on it’s own without the topping (will be posting that recipe soon))
I am still baking dairyfree, glutenfree. Even without the white chocolate chunks (which I skipped), they were fabulous, and you'd never know they were glutenfree

Can you tell by the picture that it's glutenfree, dairyfree and refinedsugarfree. Coconut flour is made from the dried ground flesh of coconuts so it makes the perfect flour for anyone following a glutenfree diet as it contains no gluten whatsoever
Other toppings could be banana slices, goji and/or inca berries, chopped fresh dates or even a few slivers of fresh ginger sprinkled with rapadura sugar, to spice it up a bit

Sugary, minty treats aside, I have now come to appreciate the beautiful flavour of fresh mint, whether shredded in a salad, wrapped in rice paper rolls or simply steeped in some hot water as a lovely tea
