Ingredients

  • For the cake
  • 125 g dairy-free spread (or butter if you're not dairy free)
  • 100 g dextrose (or sugar)
  • 1 ts vanilla
  • 4 eggs
  • 1 pinch salt
  • 165 g brown rice flour
  • 65 g tapioca flour
  • 1 tsp xanthan gum
  • 2 tsp baking powder
  • 2 tbsp rice milk
  • 1 tsp lemon juice
  • 400 g tart apples, peeled and diced
  • lemon juice, extra
  • 200 g plums sliced in halves (I used canned)
  •  
  • For the topping
  • 25 g tapioca starch
  • 50 g brown rice flour
  • 60 g dairy-free spread (or butter if you're not dairy free)
  • 60 g dextrose (or sugar)
  • 50 g sliced almonds or walnuts
  • 1 tsp cinnamon
