Ingredients

  • 2 tbs extra
  • ½ a fennel bulb
  • 1 shallot
  • 3 garlic cloves
  • Sea salt
  • Black pepper
  • 2 tomatoes
  • 250 ml thin cream
  • 1 tsp saffron threads
  • 250 ml fish stock
  • 2 kg mussels
  • 350 ml milk
  • 2 bay leaves
  • 1/4 tsp ground nutmeg
  • 60 g butter, plus extra
  • 60 g plain flour
  • 120 g goat’s cheese, crumbled
  • Ground black pepper
  • ½ cup grated parmesan
  • 4 organic eggs, separated
  • 2 red witlof, julienned
  • 2 white witlof, julienned
  • 50 gm hazelnuts, roasted, peeled and chopped
  • 3 tbs extra virgin olive oil
  • 2 tbs pomegranate molasses
  • 1 tbs lemon juice
  • Sea salt
  • Ground pepper
