Ingredients

  • 74 countries have taken part and over
  • 900 ambassadors are championing our cause worldwide
  • 2-4 eggs, boiled, peeled
  • 1 zucchini, peeled into ribbons with a vegetable peeler, lightly fried
  • 2 yellow squash, thinly sliced, lightly fried
  • 6-8 baby Roma tomatoes
  • 1 bunch broccolini, steamed
  • 1 red capsicum, sliced
  • 150 g green beans, trimmed, steamed
  • 1 handful black olives
  • 1 bunch radish, scrubbed to remove dirt
  • 150 g cheddar cheese
  • 1 sourdough baguette, or other bread of your choice, sliced, toasted
  • Range of dips (I’ve used pesto and zucchini hummus)
