Reduce the heat and simmer until the syrup is thick and the slices are tender but intact, turning occasionally (be gentle!). Transfer the slices to a rack to cool and keep the syrup for another use (cocktails baby!).
When you are ready to serve, remove the cake from the pan and dust generously with the cocoa powder. Spray a 22cm springform round cake pan with cooking oil spray and line the base and sides with baking paper. Bake for 40 minutes, then remove the foil and cool the cake in the pan the refrigerate until cold
Serve with a dollop of orange-blossom scented double cream (or plain cream) and candied orange peel if you wish – I served mine with vanilla bean ice cream and my parents (mum even makes her own flourless orange cake) LOVED IT
