Ingredients

  • 420 g of plain flour (3 cups)
  • 1 tsp bicarbonate of soda
  • 1/4 tsp salt
  • 250 g of unsalted butter (1 cup), at room temperature
  • 300 g of soft dark brown sugar (1 1/2 cups packed)
  • 2 large free range eggs
  • 2 tsp ground cinnamon
  • 1 1/2 tsp ground ginger
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • pinch ground cardamom
  • 45 g of sliced blanched almonds (1/4 cup)
