Visually the sliced ginger on top is a nice touch, but I love the texture of the chewy ginger laid in all that rich raw chocolate as it snaps beneath your teeth

My favourite breakfast food when I'm on holidays is bircher muesli, so with Christmas a little over a week away and most of us heading off for some well earned R & R, I thought it would be a perfect time to share my version
You could experiment with using white chocolate as a topping too, but firstly, it's not usually dairy free, secondly, it didn't look quite so nice once cooled and set, and thirdly, it just didn't taste as good, which is why I haven't put it as a suggestion - it was my favourite Green & Black's organic white chocolate as well

) and plenty of heat from the chillies and a gingery zing. The pesarattu was excellent, the coconut chutney was good (it had the passed the test of - not rancid, more coconut, less roasted chana… etc) but the allum pacchadi that I very adventurously helped myself to, turned out to be the dark horse

This makes the most delicious, darkly intense chocolate gelato. It is dairy free but without the usual coconut or almond milks to take away from the flavour of the chocolate
