Ingredients

  • 300 g Calamari, cleaned, cut into rings
  • 500 ml Milk
  • 1 Ripe Kiwi Fruit
  • 400 g Chickpea Flour
  • (Also known as Besan Flour, but it's possible to use Cornflour instead)
  • Oil for Frying (Canola, Vegetable etc.)
  • Salad for Serving
  •  
  • For Aioli
  • 3 Egg Yolks
  • 1 heaped teaspoon Dijon mustard
  • 1 tbs Vinegar
  • 1/2 tsp Minced Garlic
  • 400 ml Oil (unflavoured i.e. Vegetable, Grapeseed, Canola)
  • Seasoning
  • 1/2 Lemon, juiced
  • Warm water for thinning
