  • 2 duck marylands (leg and thigh)
  • 2 tbs rock salt
  • 1 tbs castor sugar
  • 4 thyme sprigs
  • 1/2 tsp peppercorns
  • 2 bay leaves
  • 1 large clove garlic
  • 2 cups duck fat
  • 2 medium beetroot
  • 2 tbs feta
  • 1 handful rocket leaves
  • Dressing
  • 1 tbs cider vinegar
  • 1 tbs honey
  • 1 tbs olive oil
