Mini meat pies
Pastry
I used the shortcrust pastry recipe from the Thermomix EDC recipe book although used organic spelt flour instead of plain wheat flour.
200 g
organic spelt flour
100 g
butter
pinch of salt
50-60 g
chilled water
Ingredients
1 1/2 c
organic cornflour (I used 1 c cornflour and 1/2c Orgran gluten free plain flour)
1/2 c
organic soy flour
1 heaped
tsp xanthan gum
pinch salt
125 g
butter
1 egg
yolk
1/4-1/2 c
chilled water
Meat Filling
700 g
beef steaks (I used rump only because it was half price that week however you would normally use a cheaper cut such as Chuck Steak)
2 tbs
oil
2 tbs
plain flour (gluten free if making gluten free pies)
1 brown
onion
3 cloves
garlic
5 mushrooms
(organic preferable),
2 tbs
vegetable stock concentrate (made in TMX), 1 1/4c liquid stock, or 2 tsp commercial stock powder (try to stick to something without MSG and other additives, such as Massells)
1 1/4 c
water (only add this water if using stock concentrate or stock powder. NOT liquid stock as it will be too much liquid!)
Cheese platter with carrot and celery sticks, tasty cheese cut into small squares for the kids, hommus dip and a spinach and cashew pesto, and wholegrain rice crackers
Barley and sunflowers, burdock and high-protein wheat grass, and occasionallynon-GMO raw alfalfa, are all part of his rabbits’ diet, making for flavorful meat that goes beyond the usual — and inaccurate — comparisons to chicken

Virtuallyall of the soups and hot meals here can be cooked in advance and frozen in portions for easy re-heating if you're not sharing with the family (I batch-cook, and freeze in small food bags), and salads can all be prepared the day before and dressed before eating
The hardest part of this Smartie Cookie recipe, is stopping the kids from eatingall the Smarties. This Melt and Mix Lemon Cake is perfect for the kids as you can simply set out all of the ingredients and let them put it all together
soup/stew gluten-free vegetarian lentils Indian. I've heard a lot of talk of folks making beans especially lentils to bring prosperity for the New Year
I also plan to put it all together in an e-book so everyone can access it in one handy location. So I’ve been testing out recipes, researching, planning and putting together a whole heap of information to share over the next few weeks
Seafood Pot-au-Fleu with Rustic Bread. Or are you like me lately, an armchair traveler, who explores cities and cultures more through recipes then by actually getting on a plane
Although it has an Indian influence it is very mild and the kids gobble it up without complaint. This is my go-to easy meal that I always whip up when I am having an ‘I can’t be bothered’ kind of day
