  • 1/2 cup hazelnuts
  • 1 medium zucchini, shredded
  • 40 grams buckwheat flour
  • 40 grams white rice flour
  • 40 grams brown rice flour
  • 1/2 cup cocoa powder
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/4 cup Greek (or natural) yoghurt
  • 1/4 cup rice bran oil (or other flavourless vegetable oil)
  • 1/2 cup caster sugar
  • 1 teaspoon instant coffee powder
  • 1 teaspoon vanilla extract
  • 1/2 cup dark (or milk) chocolate chips
