  • 280 g plain flour (2 cups)
  • 2 tsp bicarbonate of soda (baking soda)
  • 1/2 tsp salt
  • 2 tsp ground ginger
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/4 tsp ground cardamom
  • 180 g unsalted butter, melted and cooled (3/4 cup)
  • 190 g sugar (1 cup)
  • 60 ml molasses (1/4 cup)
  • 1 large free range egg
  • sugar for rolling
