roasted or raw nuts of choice (I used cashews, pistachios, almonds and hazelnuts)
dried fruit of choice (I used craisins, apricots and dates)
chocolate chips plus some extra
coconut oil, in microwave 1 minute on highest setting. Stir with metal spoon, if not fully liquid, return to microwave further 15-30 seconds Spread over the top of slice and sprinkle with shredded coconut. Refrigerate until chocolate is well set. Slice into squares and serve. Keep refrigerated in an airtight container.

I tweaked the recipe a little by adding some rice malt syrup (which makes it no longer paleo seeing rice is a grain) but I wanted the kids to enjoy it and it would have been very intensely chocolatey otherwise
Pour the chocolate over the top of the sliceand allow to set before cutting into slices. There’s no need to clean the Thermomix in between the steps in this recipe… just wait until you’re ready to make the chocolate topping then give it a quick wash and dry
Tip add chocolate chips for a decadent touch. It is absolutely perfect for visiting friends, relatives or events where your child will not want to miss out, all the location requires is a microwave and a mug
