Ingredients

  • 1 onion
  • 2 cloves garlic
  • 2 tablespoons olive oil
  • 1 kg chicken thighs
  • 185 g bacon
  • 45 g butter
  • 1 1/2 tablespoons plain flour
  • 1 1/2 cups chicken stock
  • 1 tablespoon
  • 1 teaspoon
  • 1 teaspoon dried thyme
  • 150 g baby spinach
  • 1 cup grated
  • 2 sheets
  • 2 cups plain flour
  • 1/2 teaspoon baking powder
  • pinch salt
  • 110 g butter
  • 1 egg
  • 1-2 tablespoons iced water
  • 23 cm deep pie plate. Use the remaining beaten egg white to brush over the pastry base. Fill with chicken mixture.
