  • 500 g chicken thigh, cut into 2cm cube
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon minced ginger
  • 6-8 curry leaves
  • 2 teaspoon madras curry powder
  • 1 large tomato diced
  • 1 cup dried apricots, roughly chopped
  • 250 ml light coconut milk
  • 2 tablespoon apple cider vinegar
  • 300 g pumpkin, diced into 1 cm cube
