  • 8 waxy potatoes
  • 2 sprigs of fresh rosemary
  • 6 cloves garlic
  • 1 cup duck fat
  • Sea salt
  • 2 chicken carcass
  • 50 gm butter
  • 1 brown onion
  • 1 large carrot
  • 2 sticks celery
  • 100 gm Shitake mushrooms, thickly sliced
  • 750 ml Pinot Noir
  • Black pepper
  • Sea salt
  • 5 minutes Season to taste.
