  • 2 cos hearts, washed and torn into bite sized pieces
  • 2 eggs, soft-boiled or if you prefer, poached
  • 6 pieces of eye bacon or prosciutto, baked until crispy and then broken into small bits
  • 1/2 cup croutons (or 1 bread roll home-made)
  • anchovies (optional)
  • 1/4 cup Parma Reggiano parmesan cheese shaved
  • Sea salt and cracked black pepper to season
  • 3 tbl sp. Extra Virgin Olive Oil
  • 1 tsp dijon mustard
  • 2 tbl sp. white wine vinegar
  • 1 tsp honey
