Ingredients

  • 1 lb eggplant (Japanese, Chinese, or Thai), cut into 1 cm cubes
  • 1 lb ground pork, chicken or turkey, fresh
  • 4 cloves garlic, minced
  • 2 shallots
  • ½ inch ginger
  • 1 spring onion
  • 1 tbsp Shao Xing cooking wine
  • 100 mls water
  • 1 tbsp corn starch mixed with 2 TBSP water to make a paste
  • bunch of coriander leaves
  • oil for deep frying
  • 4 tbsp black bean paste
  • 1 – 2 tsp chilli paste
  • 1 tbsp oyster sauce
  • 1 tbsp rice vinegar
  • 2 tsp sesame oil
  • sugar to taste
